BATATAS/ CAMOTES CON MERENGUE

Esta receta solía prepararla mi madrina, de esto hace muchisimos añosssssss, amaba este postre que seguro les va a encantar si les gustan las batatas

NECESITAMOS: 4 Batatas o Camotes bien lavaditos 6 cucharadas de azúcar 2 claras de huevo 2 cucharadas de alguna bebida fuerte esto es optativo

PREPARACION: Lavar muy bien kas batatas. Poner a cocinar las baratas, cortadas a la mitad a lo largo, hasta que al pincharlas estén cocidas. Sacarlas del agua y colocarlas en una fuente plana. Cuando estén tibias con una cuchara y con cuidado quitar la pulpa o el centro, dejando un poquito alrededor para que no se nos rompa la cascara. En un bols con la batata o camote que quitamos hacer un puré y agregar 2 cucharadas de azúcar y 2 cucharadas de alguna bebida a gusto, vino blanco, licor , etc… esto es optativo. Volvemos a rellenar las mitades de batata y colocamos en una asadera o bandeja enmantecada. A parte batimos las claras con una pizca de sal y cuando estén bien espumosos agregamos las 4 cucharadas restantes de azúcar, seguimos batiendo hasta formar un merengue consistente . Con una cuchara de postre colocamos pequeños copos de merengue sobre las medias baratas y llevamos al horno pre calentado a 200 grados x 15 o 20 minutos o hasta que el merengue este dorado. Dejar entibiar y servir y a disfrutar se ha dicho. Es un postre muy nutritivo y muy económico… A disfrutarlo, Atte La Abuela
