Pastel de Elote o Choclo Salado

El pastel de Elote o Choclo existe en la gastronomía Mexicana desde hace siglos. Con el tiempo y la llegada de nuevas culturas, se le fueron agregando más sabores, que realzan su sabor único.

Ingredientes:

  • 6 mazorcas de choclo
  • 1 cebolla grande
  • 6 huevos
  • 1 cucharita de polvo para hornear
  • 2 cucharas soperas de fécula de maíz
  • Sal a gusto
  • Queso cremoso o fresco a gusto(yo usé 500g)
  • 30cc de aceite de girasol
  • 2 cucharas de manteca
  • Le puedes agregar junto con el queso, 200 ha de jamón o paleta picada, cebolla fileteada y morron en tiritas, tehogado en unas gotas de aceite y salpimentado , así lo preparo y a los míos les encanta.

PREPARACIÓN:

1. En primer lugar, rallar el choclo. También pueden desgranar y licuar. Pero el choclo queda muy líquido, pierde «cremosidad». Así que a rallar!!!! Lo vale!

2. Saltear la cebolla cortada en pequeños cubos en el aceite y la manteca, hasta que esté tierna y transparenta. Retirar del fuego. Dejar que la preparación tome temperatura ambiente.

3. Al choclo rallado agregaremos el polvo para hornear, sal y la fécula de maíz, mezclar.

4. Agregar las cebollas salteadas, mezclar.

5. Batir 6 huevos, solo para integrar yemas y claras. Incorporar a la preparación anterior.

6. En una placa apta para horno, que habremos  aceitado. Colocaremos la mitad de la preparación y por arriba queso cremoso en trozos, la cantidad es a gusto.

Más queso, más rico jejejeje. Cubrir con el resto de la preparación. Llevar a horno pre calentado 200º hasta que se dore tanto arriba como abajo. Coman rico atte La Abuela
